It is best to use the dough immediately or the following day. However dough balls can be kept wrapped in plastic in the fridge for 3 days or in the freezer for 8 weeks.
Tomato sauce and mozzarella should be consumed within 3 days.
The dough balls are supplied wrapped in cling film.
If you are planning on using the dough the same day you purchased them:
Step 1: Dust a chopping board or benchtop with flour.
Step 2: Unwrap the cling film around the dough balls.
Step 3: Place dough balls on floured chopping board or benchtop.
Step 4: Place new cling film over the dough balls to prevent them from drying out.
Step 5: Wait 1 - 2 hours for the dough to prove. They should double in size. The time the dough takes to double in size will depend on the temperature of your room.
Step 6: Once doubled in size, remove the cling film.
Step 7: Freshly flour the desired spot on your benchtop or wooden board where you will be stretching out the dough. Then with a spatula and your spare hand move the dough to the floured spot.
Step 8: Flour the dough liberally, and proceed to stretch the dough out either with your hands or a rolling pin. Tip - If using your hands: Start pressing from the centre of the dough outwards and try not to press down on the edge so you can create a nice crust.
Step 9: Dust off all the excess flour either by shaking by hand (be careful as the dough is very soft and may tear) or by using a brush.
Step 10: Apply your tomato sauce, mozzarella and any other ingredients and prepare to cook!
If you are planning on using the following day:
Leave the dough wrapped in plastic in the fridge overnight. The next day remove from the fridge and proceed to follow the steps above from the beggining.
If you are planning on using the dough sometime next week or further into the future and or are purchasing it as a gift for someone:
Leave the dough wrapped in plastic and place in the freezer. When ready to use, remove from the freezer and transfer to the fridge. Allow it to slowly defrost in the fridge. Once completely defrosted remove from the fridge and proceed to follow the steps above from the beggining.
The tomato sauce and mozzarella can also be frozen. Defrost the same way as the dough. Remove from the freezer and transfer to the fridge and allow to slowly defrost.
